UPDATE tblKit
SET number = REPLACE(number, 'KIT', 'CH')
WHERE number like 'KIT%'

or simply this if you are sure that you have no values like this CKIT002

UPDATE tblKit
SET number = REPLACE(number, 'KIT', 'CH')
